Hotel Heron, which is expected to open in the coming weeks, will feature three new venues for drinks and dining.

The flagship restaurant will be called KILN, with a wood-fired oven focused on Mid-Atlantic cuisine. “Guests can visit the all-day restaurant to enjoy both beloved classics, skillfully reimagined with a contemporary twist as well as locally inspired dishes that celebrate the best of the Chesapeake Bay and beyond,” according to the hotel.

In addition, the hotel will feature two cocktail bars. The first, Francis Hall, will be in the center of the hotel featuring cocktails and small bites. The second, Good Fortune, will be on the rooftop of the hotel and will feature live music.

Chef Matthew Maienshein is at the helm of KILN and the restaurants two cocktail bars. His career includes time at the Jean-Georges at the Four Seasons, Topping Rose House and Jojo by Jean-Georges. Betty Woodward will be director of food and beverage at the hotel.

The six-story building originally opened in 1926 as the George Mason Hotel at 699 S. Washington St. in Old Town. The building was then converted to commercial office space after the hotel closed in 1971, and its most recent occupant was The Center for Missing and Exploited Children, which moved out of the building in 2018 into a new, modern space in the Carlyle neighborhood.

The hotel is allowing guests to book rooms starting in July.
